Asparagus is such a beautiful ingredient and, as the season is so short - from the end of April to the middle of June - it’s all about making the most of it when it’s here.


Heritage Tomato Salad with Goat's Curd
This is summer on a plate. I’m a great believer that if you have sensational ingredients you should respect them, not mess around with them too much, and let them speak for themselves. The sweet flavours of beautiful and colourful tomatoes are paired in this dish with a light and creamy goat’s curd, while the dressing elevates the flavours to new heights. Simple but stunning. You’ll enjoy every mouthful.


Flat Iron Tartare
Whilst there are a few ingredients with this dish, most are in store cupboards so it shouldn’t be too difficult. As you’re using raw beef, it’s a pretty quick dish to put together, however its important you spend time to get the best quality beef you can! This recipe is very French and, although The Corner House is all about celebrating great British food, I wanted to include it as they are friendly neighbours, who know more than a thing or two about great food.


Chicken Liver Parfait with a Port Jelly
This dish has been on the menu since we opened The Corner House at Minster. It is one of my personal favourites. The sweetness of the port jelly perfectly complements the savouriness of the chicken livers and gives the dish balance. It’s also a great dinner party starter as it can be prepared in advance and stored in the fridge. All you have to do when your guests arrive is serve it with toast.


Beautiful Cauliflower Soup
This is a very simple recipe. It’s a dish that I genuinely love because it shows the humble cauliflower in all of its glory. Cauliflower is a beautiful vegetable that is frequently under- utilised; though I’m not sure why when it’s packed with so much flavour. When cauliflower is roasted in the oven, it caramelises and takes on a delicious nutty flavour as the natural sugars intensify. This creamy and indulgent soup puts a smile on people’s faces in the winter months.


Beetroot-Cured Salmon and Cucumber Jelly
This really does tick all of the flavour boxes when you’re looking for a great, light dish. The salmon is given a sweet and earthy marinade, the horseradish adds a little heat, the cucumber keeps things light and refreshing, while the subtle hint of dry gin gives it a little kick. It’s heaven on a plate.
