Ingredients
500g ‘00’ flour
1⁄2 tsp sea salt
4 whole eggs
6 egg yolks
2 tbsp rapeseed oil
Salt and pepper
Preparation
Add the ingredients into a food processor and whizz to combine. Stop to scrape down the sides and whizz again.
The mix should form small lumps, which will hold together when pressed with your fingers.
Tip onto a floured surface and knead for a few minutes until smooth and springy.
Cling film and allow to rest in the fridge for at least 30 minutes.
