Ratatouille

There are much simpler recipes out there for ratatouille and this recipe does involve some knife skills but it’s totally worth it to enjoy the end result. It looks pretty and is a great accompaniment to meat or fish.

Ingredients
1 x aubergine, finely diced 1cm square
1 x large courgette, finely diced 1cm square
1 x red pepper, finely diced 1cm square
1 x orange pepper, finely diced 1cm square
1 x yellow pepper, finely diced 1cm square
3 tbsp onion marmalade
5 tbsp tomato ketchup
Rapeseed oil
Salt and pepper
Preparation
Finely dice your vegetables, ensuring they are kept separate. The main thing is that they are all the same size to ensure an even cook.
Heat the rapeseed oil in a pan and quick fry the vegetables separately so they are just cooked. Place in a large tray to cool.
Once all cooked, add the onion marmalade, tomato ketchup and season to taste.
Heat in a saucepan and serve.
