Chocolate Orange Bread and Butter Pudding

This has to be the ultimate British comfort food. I love the texture and combination of the chocolate and orange zest running through it. The addition of orange zest helps it beat the much-loved original.

Ingredients

1⁄2 a loaf of sliced white bread
100g unsalted butter, soft
8 eggs
530 ml milk
270 ml cream
8 tbsp sugar
1 vanilla pod, use the best you can find
Zest of 2 oranges
200g dark chocolate chips, 70% or over cocoa solids

Preparation
  1. Mix the eggs and sugar using a whisk, then add the milk, cream, vanilla and orange zest.
  2. Butter a baking tray and butter one side of the bread. Cut each piece of bread into two triangles.
  3. Layer the bread in the baking tray, adding chocolate chips and orange zest to each layer and the mix as you build it.
  4. Cook in a bain-marie at 160°C. Check after 25 minutes; you are looking for the custard to be just set.
